How to Make Bingsu

Shave ice desserts are popular worldwide, particularly in Asia, and for good reason. Japan has delicious kakigori, China and Taiwan have refreshing baobing and Korea has bingsu. Bingsu, also known as bingsoo or patbingsuas, is made on a foundation of shave ice, but what separates it from similar treats is its decadent toppings.

WHAT IS BINGSU?

A bingsu covered in matcha powder, red beans and condensed milk. Next to it is a bowl of matcha.

Typically, this Korean dessert is comprised of a mound of shaved ice that’s splashed with condensed milk and topped with fruit, tteok (rice cakes) and confections. This dessert has been around for a long time but the addition of red beans was a 20th-century innovation that gave birth to a uniquely Korean dessert called patbingsu (“pat” refers to sweetened adzuki beans).

Over time, western tastes influenced the bingsu and ice cream, fruit cocktails, whipped cream, maraschino cherries and even cereal were added to recipes.

A normal bingsu serving needs 2 cups of shaved ice. You can quickly make up to 2 servings with the KitchenAid® Shave Ice Attachment. This lets you shave over 1 pint (500mL) in under one minute.4

Here are the common ingredients to make bingsu:

  • Chopped fruits – some popular options for bingsu are kiwi, mango, strawberry and fruit cocktail.
  • Sweetened red beans
  • Shave ice
  • Tteok (Korean rice cakes that develop a chewy texture after being steamed)
  • Ice cream (optional)
  • Sweetened condensed milk
  • Flavourings like matcha powder, lemon, lavender or cappuccino (optional)
  • Candies (optional)

THE TOOLS YOU WILL NEED

  • KitchenAid® Stand Mixer
  • KitchenAid® Shave Ice Attachment
  • Serving tools like bowls, spoons and straws

REQUIRED PREP TIME 

  • Ice has to be frozen in the moulds included with the KitchenAid® Shave Ice Attachment for 12-24 hours.
  • You should also pre-chill any toppings to not melt the shaved ice.

TOTAL TIME TO MAKE BINGSU       

You will need just approximately 12 hours and 5 minutes to make this frozen treat.

Once the ice is frozen, the fruits are chopped and you’ve prepped all the other ingredients, the bingsu should quickly come together.

HOW TO MAKE BINGSU

STEP 1: FREEZE

Fill the ice moulds and then freeze for 12-24 hours before you even consider shaving it. It’s a good idea to make some extra unmoulded ice and store it in large freezer bags because you never know when that Bingsu craving will hit.


STEP 2: SHAVE

Before shaving, temper the ice on the countertop. It’s ready once it glistens. Put the ice in the attachment, turn your stand mixer on the high setting and get ready to catch all that bingsu “snow” in a bowl (don’t worry, you don’t really have to catch flying snow).


STEP 3: CREATE

 A bowl of bingsu topped with strawberries and other toppings.

Before shaving, temper the ice on the countertop. It’s ready once it glistens. Put the ice in the attachment, turn your stand mixer on the high setting and get ready to catch all that bingsu “snow” in a bowl (don’t worry, you don’t really have to catch flying snow).

Now is your chance to put your spin on your bingsu. Garnish it with sweet, savoury or sweet and savoury toppings like:

  • Sweetened condensed milk
  • Matcha
  • Chopped fruits
  • Sliced Korean rice cakes
  • Nut powders
  • Earthy red bean paste
  • Cornflakes

Don’t forget to finish with some ice cream or some jellied candies.

TIPS FOR MAKING THE BEST BINGSU

The fun of bingsu comes from putting your signature on it. Pile high some ice cream and top with whipped cream. If you don’t have much of a sweet tooth, try a misugaru, a roasted grain powder that adds a nutty note to balance the sugar.

Have fun with ingredients and flavours. Once your bingsu masterpiece is done, you can stir the whole delicious concoction together to mix all those wonderful flavours. 

Bingsu isn’t like an ice cream cone, it’s not meant to be eaten alone. Enjoy with a friend or your family!

BINGSU VS. BAOBING?

Bingsu and baobing are both traditionally served in shallow bowls and topped with ingredients like fruit. The only difference is in some of the details. 

Bingsu is a ball of snowy ice while baobing is more of a tower of thinly shaved ice flakes or sheets. Baobing is usually topped with red beans but it may also have lychees, taro and peanuts. 

Similar to bingsu, most people like to douse their baobing in a sweet and creamy substance like sweetened condensed milk or coconut milk.

Ice can be customized for various shave ice desserts by using the KitchenAid® Shave Ice Attachment. If you want light and fluffy shave ice, use the fine blade that’s included with the appliance. If a recipe calls for crunchier and heavier snow, switch to the coarse blade.
